This soup is excellent for enhancing the skin and expelling heat from the body. Superb for our crazily hot weather these days! It is easy to make, and I cook this regularly for my family.
American Ginseng
Amercian Ginseng is cold in nature, taste bittersweet, enhances qi and expels heat. It may also help to fight diabetes, fatigue and the common cold.
Dried Fig
Dried Fig will sweeten the soup. It enhances spleen, moistens our intestines and helps to fight diabetes, bronchitis and hypertension.
Papaya
Papaya not only helps to regulate menstruation, but it is also anti-inflammatory and treats constipation.
Ingredients
20 grams of American ginseng
1 papaya
Ten pieces of dried figs
One whole chicken
2500ml of water
Salt to taste
Method
Rinse the Amercian ginseng and dried fig.
Blanch chicken and set aside.
Bring water to boil and add in all the ingredients.
Let the soup boil over high heat and turn to low heat to simmer for 3 hours.
Season with salt to taste.
